Could a Nutrient Gap Be Behind Your Toddler’s Picky Eating?

Most first-time parents have heard the same explanation when a little one suddenly refuses food. It is just a phase. They are being fussy. Sometimes that is true. Other times, the body is quietly missing something it needs to want food in the first place.

What it is and why it matters

Zinc is a trace mineral involved in growth, immune function, wound healing, and the development of taste and smell. From around six months of age, the zinc stored during pregnancy begins to deplete and breastmilk concentrations drop, which is why solid foods become the main source of zinc from that point onwards. The current Australian Recommended Dietary Intake is 3 mg per day for infants 7 to 12 months and toddlers 1 to 3 years (NHMRC, 2006).

When zinc is low, two things happen at once. Taste perception dulls, so food becomes less rewarding. Appetite-regulating signals shift, so hunger feels less reliable. Together, these can look a lot like ordinary picky eating.

What the research shows

A small Japanese study using rats found that zinc deficiency rapidly altered taste preferences and reduced the activity of a key zinc-dependent enzyme on the tongue called carbonic anhydrase VI, also known as gustin (Komai et al., 2000). Gustin is highly concentrated in taste buds and salivary glands. When zinc is low, gustin activity drops, and taste sensitivity drops with it.

Human research backs this up. A clinical trial of patients with low gustin and impaired taste found that oral zinc restored taste bud structure and improved taste and smell acuity in the majority of responders (Henkin et al., 1999).

Picky eating itself has been linked to lower zinc intake. A study published in the American Journal of Clinical Nutrition found that three-year-old picky eaters had significantly lower intakes of iron, zinc, and carotene than non-picky eaters, with intakes most often falling below recommended amounts (Carruth & Skinner, 2002).

In Australia specifically, the Australian Feeding Infants and Toddlers Study (OzFITS 2021) estimated that around 20% of infants aged 6 to 11.9 months had inadequate zinc intake, while iron inadequacy was as high as 75% in the same age group (Atkins et al., 2022). Both nutrients matter, and both come from the same food groups.

Strategies for the early years

The window from six months onwards is when food choices have the biggest impact on zinc status. The following steps focus on getting enough in, simply and consistently.

Lead with iron and zinc-rich first foods. Around six months, prioritise foods like slow-cooked beef, lamb, chicken thigh, liver, egg yolk, and well-mashed legumes. The Centers for Disease Control list red meat, poultry, fish, dairy, and legumes among the most reliable zinc sources for babies starting solids (CDC, 2024).

Favour animal sources where possible. Zinc from meat, fish, and eggs is absorbed at roughly 40 to 50%, compared with 15 to 25% from plant sources, because compounds called phytates in grains and legumes reduce mineral absorption (NHMRC, 2006).

Reduce phytate load in plant foods. Soaking, sprouting, or fermenting legumes, oats, and grains before cooking lowers phytate content and improves zinc availability. This matters most for vegetarian or plant-leaning families.

Pair zinc-rich foods with vitamin C. A small amount of capsicum, kiwi, or citrus alongside iron and zinc-rich meals supports absorption.

Watch milk volume in toddlers. Excess cow’s milk after 12 months can fill little bellies and crowd out zinc-rich solids, sometimes contributing to lower appetite for actual meals.

Talk to a GP or maternal child health nurse if signs add up. Persistent low appetite, slow growth, frequent infections, very dry skin, slow wound healing, or thinning hair are worth raising. Zinc is not part of standard pathology panels, so it is a conversation worth having rather than assuming.

A real-life example

A 14-month-old has been refusing dinner for weeks. Most days she eats a bit of toast, some banana, and a few crackers, then turns her head from anything else. Her mum notices the diet has slowly narrowed to mostly grains and fruit. She starts adding small amounts of slow-cooked shredded beef into one meal a day, alongside soft-cooked carrot and a few lentils. Within a fortnight, the baby is reaching for second helpings at dinner. Nothing dramatic. Just a body that finally has enough of the nutrient it needed to feel hungry.

A gentle close

Picky eating is not always personality, and it is rarely about willpower. Sometimes a little body is just missing what it needs to taste, want, and enjoy food. Building a foundational, nutrient-dense diet from the very start of solids is one of the most quietly powerful things a parent can do. Zinc is one part of that picture, but it is a part worth knowing.
